A Recipe or Two for You

Hello my friends and welcome to another blog. Some of you have asked me to share some of my favourite recipes because I’m trying so many different diets. I think that’s a great idea, and I hope you are inspired to try some of them. I’m going to do the Paleo and Mediterranean diets together because there were lots of similarities in the recipes. Each recipe can be modified to your own liking, you might just have to play with it.

A quick disclaimer. I am not a nutritionist. These are some recipes that I enjoyed while trying these diets and I am not telling you to eat these to lose weight. I simply invite you to try some for your own enjoyment. These recipes are not my own, but from the app I was following for them. I may have altered the recipes slightly if I was missing an ingredient or it contained an ingredient that I didn’t like. So, without further delay, on to the food.

Baked Salmon With Potatoes, Broccoli and a Herb Dressing

This meal was delicious, and I believe it was found on both plans. All you need is:

  • 1 tbsp Olive Oil
  • 1 tbsp Basil (fresh if you have)
  • 1 tsp mixed herbs (use your favorites)
  • 130 g broccoli (I used frozen rather than fresh)
  • 123 g potato (I used small potatoes instead of the bigger ones)
  • 1 pinch salt and pepper
  • 50 g salmon (you can use chicken if you are allergic to seafood, and I’m sure you can use tofu if you don’t eat meat. Cooking time may vary.)
  • 1/2 tbsp white wine vinegar

Prep is quite simple. Bake the salmon at 425 F for 12 minutes or till it’s done. I’m not sure about temp or time for chicken or tofu, so you may have to experiment if you’re trying the recipe with either of those ingredients in the place of salmon. Peel and cut the potatoes and boil in salted water until done. (I did not peel my potatoes because I used small ones and I’m lazy :P) If you’re using fresh broccoli, cut into florets. If you bought frozen, just cut the bigger ones if needed. Blanch in boiling, salted water for 2-3 minutes. Place the vegetables on a serving plate, along with your baked salmon. For the dressing, mix olive oil, white wine vinegar, your herbs and salt and pepper. Drizzle over your potatoes and broccoli and enjoy.

Asparagus, Potato and Egg Salad with Walnuts and Mint

I know, a salad. How exciting. Honestly, this is the best salad I’ve ever had. I will admit that I did alter the recipe and excluded the walnuts, because I didn’t have any, and the mint. The mint was nice, but I didn’t think the recipe needed it. However, that is my own preference and you can make it your own as well, or follow the recipe. And for all you who are not fans of asparagus, my only suggestion would be to replace the asparagus with green beans. Here is what you will need:

  • 2 eggs
  • 2 tsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp chopped mint
  • 100 g asparagus
  • 19 g walnuts
  • 2 cups of baby spinach
  • 60 g potatoes

To make this you boil or steam your asparagus for about 7 minutes and then cut into bite sized pieces. Cut and boil your potatoes and boil your eggs to your liking, peel and cut in half. Crush the walnuts and arrange everything on a bed of spinach. Mix your oil and vinegar with a sprinkle of salt and pepper for your dressing. Drizzle over the salad and enjoy.

Spanish Tortilla with a Fruit Salad

The final recipe for the blog. This was something completely new and I loved it! So filling, so delicious, and the best part is it’s so easy to make. Here’s what you will need:

  • 2 eggs
  • 1 clove of garlic minced
  • 1 tbsp parsley
  • 100 g oranges
  • 20 g onion
  • 50 g apple
  • 80 g potato
  • 1 banana
  • 1 tomato

To make it, peel and cut your potato into small cubes and boil in salt water till cooked. Dice your onion and fry in a skillet until translucent. Add your cooked potatoes, and cook for a few minutes before adding your garlic. Whisk your eggs and add to the skillet. Cover and cook on low for 10 minutes, or until your eggs have set. While that’s cooking, cut your fruit into cubes and place in a bowl. Plate your tortilla and sprinkle with parsley. Serve with sliced tomatoes and your fruit salad.

Summary:

These are just 3 recipes that I tried and really enjoyed. I’m sorry I didn’t have pictures to go along with them. Apparently I forgot to take them. Oops. I’ll try and do better with the next one.
